2013 Food Network Stage


The Gourmet Food & Wine Expo is proud to present the Food Network Stage. Satisfy your hunger for a fabulous culinary experience, the Food Network Stage offers continuous chef demonstrations throughout the Expo. Don't miss our non-stop line up of celebrated professionals; from breakthrough talents, to trend-setting innovators, to seasoned celebrities. The Food Network Stage is sure to provide something for everyone! Our eager audience is invited to interact with our recognized chefs and learn the secrets of their culinary delights. Aspiring sous-chefs from the Niagara College Culinary Institute aid in the preparation and presentation of each demonstration.

THURSDAY

6:30pm Innovative Cooking
Celebrity Chef Darryl Fletcher, host of At Home with Chef D and Corporate Chef for Gaylea and Ivanhoe Cheese, shares his cheddar and lager soup, mac and cheese and bacon-wrapped dates.
7:30pm Fresh & Local
Sam Seaver of Niagara College’s Benchmark Restaurant will prepare richly flavoured beer-braised beef stew made with savory beef, winter vegetables and the College’s own wine and ale as marinades.
8:30pm Rock Lo-o-obster

Chef Matt Pettit, owner of Rock Lobster shows how to prepare lobster like a pro and shares delicious recipes and serving suggestions.



FRIDAY

3:30pm Feel Good with Plant-Powered Food
Vegan Chef | Owner Moira Nordholt of Feel Good Guru will prepare a super-healthy and delicious raw vegan lunch with local organic ingredients.
4:30pm Italian Culinary Skills
Executive Chef, Brett Turnbull of Fraticelli’s Italian Grill and Top Chef Canada contestant will showcase his signature Italian cuisine and share a few of his rich and delicious recipes. Grazie Mille!
5:30pm Authentic Mexican
Chef Arturo Anhalt of Milagro Restaurant will prepare rustic dishes using fresh corn, tortillas, native spices and regional chillies — a fiesta in itself!
6:30pm Celebrity Chef Roger Mooking 
Celebrity Chef Roger Mooking from Everyday Exotic and Chopped Canada on Food Network will prepare a delectable grilled steak with spicy shrimp and black bean sauce. Enjoy Roger’s incredible culinary talents and wildly entertaining demeanour as he showcases his signature style live at the Expo!
7:30pm Root to Leaf Cuisine
Chef Robbie Hojilla from Hudson Kitchen will show off his truly progressive American approach to classic foods using entire ingredients, from root to shoot!
8:30pm Oyster 101
Owner Rodney Clark and Chef Rodrigo De Romana of Rodney’s Oyster House will educate and entertain with a shucking contest then preparing their appetizing Oyster Po’boy

SATURDAY

12:30pm Singapore-style
Chef Alec Martin of Hawker Bar has sourced some of the finest Singaporean ingredients in Toronto. Savour a variety of Asian flavours and experience all that the season has to offer.
1:30pm Italian-Indian Fusion
Stephen Vaz of Eudora’s Fine Foods will use his ready-to-eat signature sauces to create a personal pizza and teach you how easy it is to make everyday food exotic.
2:30pm Ultimate Experience
Chef Matt Hemmingsen of Windows on Rockway takes great pride in preparing continental cuisine and is well-known for using only the best that the Niagara region has o offer.
3:30pm Bistro Classic
Chef Patrick from Patrick Bermand Restaurant in Mont-Tremblant will be serving up his modern version of beef tenderloin tartare using flavourful ingredients such as French chives, fresh egg, parsley, capers and Dijon mustard.
4:30pm Candy Man
Indulge your sweet tooth when candy expert Todd Gibbons of Northern Confections demonstrates his confectionary skills and teaches you the fine art of making candy.
5:30pm That Can't Be Gluten-Free!?!
Kelly Childs and Erinn Weatherbie are taking the world by storm with their gluten-free vegan bakery. They have a passion for creating healthy and gluten-free baked goods that taste amazing!
6:30pm Raw Regime
Award-winning author & vegan Chef Doug McNish takes organic, plant-based cuisine to a whole new level. He will share his incredibly simple, yet life changing techniques, as he demonstrates his delicious sweet and savoury dishes.
7:30pm Fresh & Local
Niagara College’s Benchmark Restaurant will showcase local Canadian cuisine and sample some of the dishes from this hidden gem in Niagara.
8:30pm Oyster 101

Celebrity Chef Roger Mooking

Don’t miss the Judge on Chopped Canada live on the Food Network Stage

Roger began his culinary career at the age of 16 when he began working in restaurants across the city. He continued his professional culinary development at George Brown College’s Centre for Hospitality and Culinary Arts where he earned top honours and still continues to operate as the chair of the Professional Advisory Committee. He continued his training at Toronto’s world-renowned Royal York Hotel before co-owning and consulting on many food and beverage operations in Ontario.

Roger Mooking is the Host and co-creator of the  Food Network Canada series, Everyday Exotic, which explores flavours from around the globe and shows viewers how to use these ingredients in everyday cooking. Roger’s award-winning cookbook of the same name hit the shelves in 2011, garnering an award from the prestigious Gourmand World Cookbook awards.

Roger also co-hosts Food Network’s hit series Heat Seekers with Aarón Sanchez and is Host of Man Fire Food, where he travels around the US exploring different ways to cook with fire and prepare barbecue inspired dishes. Roger can soon be seen as a judge on Chopped Canada, premiering on Food Network Canada in Winter 2014.

His culinary talents have led to appearances on The Today Show, Good Morning America, Iron Chef America, Top Chef Canada, The Marilyn Denis Show as the Culinary Expert, The Wendy Williams Show, Martha Stewart Radio, Unique Eats, The Best Thing I Ever Ate, The Best Thing Made, Red, White and Grill, and Steven and Chris to name a few. He is also a regular at various food and wine festivals around the world.
